It is still necessary to use backing mortar when grinding 3/4″ deep to bond new and old mortar and maintain structural integrity.
Chimneys don’t always have such a situation. Many reasons can contribute to the deterioration of your mortar from the inside out, including cracks in your flue liners allowing gases to escape, water damage caused by a cracked concrete crown, etc. In other words, the chimney is doomed by its inability to pack new mortar firmly against the old mortar, and it will deteriorate on its own. Reusing existing bricks in a chimney rebuild is possible if the mortar lacks strength, but bricks are in good condition.
Leaning Chimney
